With this asparagus salad, no cooking or steaming is required! Simply wash the asparagus spears, snap off the tough ends and discard. You might be nervous about adding raw asparagus to a spring salad, but the secret is to shave the asparagus really thin. These ribbons of asparagus create a sweet crunch in the salad.


No salad dressing with 10 ingredients over here. This simple salad dressing only needs olive oil, lemon juice, apple cider vinegar, honey and garlic. Mix all these ingredients in a bowl or shake it up in a mason jar.


So let's start making this salad recipe, you need 1 pound of trimmed asparagus spears. Using a vegetable peeler, set the stalk of asparagus on a cutting board and slid the peeler from the root to the tip, creating ribbons of asparagus, then add the ribbons into a bowl.


Now it’s time to assemble your salad! In a large bowl combine 3 cups of spring mix lettuce, and add in your ribbons of asparagus, you can also add some avocado for extra creaminess. Drizzle in your homemade salad dressing and toss to evenly distribute all those citrusy goodness.  Asparagus Spring Mix Salad Recipe

For the Dressing:

  • ¼ cup olive oil
  • 1/2 lemon - juiced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1 clove garlic- minced
  • Salt and black pepper

For the Salad:

  • 1 lb large asparagus -woody ends trimmed
  • 3 cups of spring mix salad
  • 1/2 cup shaved Parmesan cheese
  • 1/4 cup chopped walnuts
  • Sea salt and freshly ground black pepper

 

Instructions 

  • In a small bowl or jar, whisk together the olive oil, lemon juice, apple cider vinegar, honey, and garlic. Season with salt and pepper, to taste. Set aside.
  • Use a vegetable peeler to shave the asparagus. Lay an asparagus spear flat on a cutting board. Starting at the bottom end, use the peeler to shave it into long thin strips or ribbons. For smaller pieces that can't be shaved, just cut really thin with a knife.
  • Add the spring mix salad to a bowl with asparagus and toss together. Add the shaved Parmesan cheese, and walnuts. Drizzle desired amount of dressing over the salad and gently toss. Season with salt and pepper, to taste. Serve the salad immediately.
